What version of Ultimate Ubuntu are you using?

Ultimate Ubuntu 1.4 is a Fiesty knockoff, and if you are running it or
later versions, or earlier versions of Ubuntu (e.g. Dapper) then you
probably accessed the System Disk tool which may have automounted the
very first disk which is many cases with dual-boot systems (Windows,
Linux) Windows is the first disk, e.g. /dev/sda vs. Linux /dev/sdb.

You can run the commands:
$ sudo fdisk -l
to list your disks, and,
$ mount
to see what disks are mounted.

Do the above commands from a command line window (aka Terminal) before
accessing the System disk tool, then access the System disk tool, then
do the mount command again - you may see the Windows disk mounted.

Normally, without accessing the Windows disk tool, Live CD
environments (if you are using a Live CD) vs. installed versions of
Live CD environments (not sure which you are using) will not mount any
disks.
