NAS setup for Ubuntu

I have a extra computer as a NAS running Ubuntu 7.10. I don't have
any peripherals attached just a network and power cable. I would like
uninstall as much software as I can to get a lean and unclutter
install. I still want to run a gui because I have not had any luck
running Vi to edit files such as the samba config file.

When I tried to uninstall some of the extra programs I got an error
saying the gnome will not let me uninstall. Any and all tips would be
appreciated.

a quick google search got me some information:
Use the alternate cd and install in expert mode.
Uninstall ubuntu-standard.

Depending on what you want back, install xorg, firefox and what not.
